In Search of The Perfect Cheese Pairing – Carol LeValley & Josh Harris started Rustic Bakery on a whim in 2005. The couple found their passion for baking in a simple sourdough flatbread cracker that Carol would whip up for friends. They stopped at the San Francisco Ferry Building outlet of Cowgirl Creamery and mentioned to owners Sue Conley and Peggy Smith that their cheeses deserved artisan crackers. The Cowgirls bit, literally, into a sourdough flatbread and immediately placed an order for 50 cases. The first flatbread crackers were produced in a commercial bakery space behind a wine bar which was quickly taken over and turned into a cafe where Carol and Josh served coffee, baked goods and salads accompanied with flatbread crackers. Building Cafés and Community – Rustic Bakery now operates four cafes in Marin County, north of San Francisco. We moved our bakery to a larger facility in Sonoma County. Our cafes are a gathering spot for locals serving baked goods, salads and sandwiches. Our quality has never wavered, and we continue to source the highest quality, local and organic ingredients whenever possible. Our chef team creates innovative new items that showcase the bounty of seasonal ingredients from our Northern California home. Tart, plump cherries and cranberries mixed with cacao nibs and almonds combine to create a perfect snack. Truly artisanal flat crisps with delicately balanced flavours that pair beautifully with all items on any charcuterie board. Excellent on cheese boards and pairs beautifully with cheeses (triple cream brie, robiola, camembert).
